Juan Molina is the person we contacted to grind our olives for the first time. His advice and teachings have helped SOLO to become a viable project.
SOLO ECO was born from our union. He pioneered the conversion of his Continental Mediterranean climate olive groves into organic farming. The olives that we turn into this oil come from those lands.
The olive trees from which we extract ECO have one or two feet and are relatively young, only between 20 and 50 years old; the estate, entirely dedicated to organic cultivation, is located very close to Úbeda, in Jaén.

Eder Merino is the man behind one of our SINGULARES 2022: ARRONIZ.
Some time ago, this history professor decided to return to the countryside to run the family estate, including a few hectares of olive trees in Bargota (Navarre).
Eder produces unfiltered oils, as it’s traditional in the area, bottled after approximately two months of natural and careful decanting in tanks. The Ebro valley, where these olive groves are, is an oasis of sorts, 400 metres above sea level and with chalky clay soil. An area with the most extreme continental climate with a mild Mediterranean climate mix, which yields an oil with a unique character.

Con la familia Doblado descubrimos el aceite Verdial temprano de las fértiles tierras de las Vegas Bajas del Guadiana. Algo nuevo para nosotros pero tan antiguo como la almazara romana que abastecía de aceite a la capital y alrededores.
Los olivos de los que extraemos SOLO Verdial son centenarios, son autóctonos de la zona de secano en la comarca y se extiende por la provincia de Badajoz y Cáceres llegando hasta Portugal.
La aceituna verdial es grande y con alto rendimiento graso, y su aceite en verde tiene frutado medio-alto con tonos a almendra y frutas maduras. Posee un sabor agradable y dulce, con amargo y picante ligero.
